I guess living gluten-free has kind of become a routine.  I think of it less often then I did when I first started, and I think that is partially because I know what I can eat and I have more time to cook whole foods & mess around with recipes at home.

The last meal that made me pretty excited was some rice penne pasta that I prepared like a baked ziti.  I swear, if the pasta was just a little more bread-like it would have been just like a deep dish pizza.  I’ve done the fried chicken thing a few times but mostly its been a lot of dried beans & rice since the price of well, everything is through the roof.

BTW the baked penne was about $8 for ~6000 calories.  Not exactly a great deal, especially since I managed to eat the first pan in just over a day.  It definitely hit the spot!  Hopefully in the next few days I’ll post the exact recipe & some pictures I got before I devoured the meal I expected to last me half a week.  I need to figure out how this camera works, its got my pictures and it won’t give them up!

    Hi John, thanks for your recipe and blog. We eat gluten free because My wife Jackie had a wheat allergy. She can eat very small amounts of wheat. Anything more than about half a slice of bread will upset her so she decided to go gluten free. There is also celiacs in her family so we though it wise.

    Prior to that she had a lot of joint pain and stomach aches but always thought it was just her. But after going gluten/wheat free, these pains went so she had remained gluten free for the last 4 years.

    Thanks again for the blog. Was hunting around for a gluten free bread recipe and eneded up on yor blog. Would love to get the receipe for the above.

    After 55 years of suffering and pain from Fibromyalgia, arthritis and lupus, a doc finally came along and told me that I was allergic to gluten…..hmmm. So, at 55 yrs old, I am now changing everything to get this healed and out of my system. However, after a few days of carefully monitoring my diet, I feel like I’m having withdrawal symptoms that feel like the time when I gave up coffee. Just wondered if anyone else had strange symtoms out there. One good thing though, now there is light at the end of the tunnel. After my stomach heals the other nasty stuff with go away too.

    Have you tried: Tinkyada pasta (or the Trader Joe equivelant?) Tinkada is available at vitacost.com. Also Dr. Schar Pasta (Italian company, great for any thing italian related. Available at allergygrocery.com)
